The dominant east facing space has panoramic views through the famous Manly pine trees and sweeping vistas of Sydney’s iconic Manly Beach from the outdoor rooftop terrace.

The iconic Northies Cronulla Hotel is grounded in the sandy shoreline of Cronulla beach. Northies is a landmark venue in the hearts of Cronulla residents and has been considered the epicentre of the area’s social scene since it was established in 1888. Boasting a vibrant sports bar, casual dining, live entertainment and a beach chic bar turn late night party spot, Northies is a must see hot spot.
One of Sydney’s biggest venue renovations in years has been unveiled in the northern beaches, bringing Mona Vale a long-awaited food and entertainment hub. Park House, rising from the ruins of the Mona Vale Hotel, is an all-new multipurpose dining and social space, dramatically reinvented to keep pace with the neighbourhood’s exciting evolution.
Stage one is Park House Food Merchants, a dynamic new food concept opening in early November. It’s an industrial warehouse of flavours – big, bold and brazen – made fresh with love and scorched over fire and charcoal.
Just metres back from Byron Bays famous Main Beach, The Balcony sits perched high above the hustle and bustle of Byron Bays busy streets. The Balcony offers views over Lawson and Jonson street, and captures the hippy come surf culture that Byron Bay is famous for. Our food ethos here is all about seasonal, ingredient focused food; come and enjoy the afternoon sun while you tuck into some freshly shucked oysters or sample some of the regions finest produce.

Fraser Short is one of Australia’s most respected and awarded hoteliers with over 25 years’ experience in the food and beverage industry and a suite of success stories throughout his career. Owning and operating in excess of 20 bars, restaurants, wine bars and accommodation hotels – almost every Sydneysider, and countless tourists have enjoyed the vibrant atmosphere at one of Short’s venues.
Since his first venture at age 19 (ScuBar Down Under) Fraser has developed award-winning venues and is now considered to be one of the most influential operators in Australia’s hospitality landscape. In 2013 Spanton Media group awarded him for his lifetime contribution to the Hospitality industry, preceding his award as Publican of the Year by the Australian Liquor Industry Awards in 2015. In 2013 GQ acknowledged him in their 2013 Men of Influence following his award for Best Redeveloped Hotel for the Morrison Bar & Oyster Room and Best Social Media Activity by the Australian Hotels Association. Fraser’s development of Watsons Bay Boutique Hotel has been celebrated by TimeOut, the AHA, Bar Awards and WEOA with consecutive awards ranging from; Wedding Venue of the Year, Family Friendly Pub of the Year, Best Outdoor Facility and Best Social Media Activity.
The success continues as Fraser expands The Sydney Collective portfolio across The Imperial, Mona Vale Hotel, Northies Cronulla, Balcony Byron Bay and Daniel-San in Manly.
Across his career, Short has partnered with a range of world-class chefs, entertainers, stylists and architects to curate award-winning experiences for guests from Prince Harry, Khloe Kardashian, Bella Hadid, Destination NSW, and Tourism Australia to international tourists and Sydneysiders alike.
It is Short’s unique ability to mix iconic classics with innovative trends that take his ventures to new heights.
Group General Manager
James has been with The Sydney Collective since its inception and brings with him an extensive knowledge of both the Sydney and International hospitality landscape. With a passion for operations, customer service and a world class wine list, James oversees The Sydney Collective in the role of Group General Manager and has played an integral role in building the portfolio of award winning venues.
James is a born and bred Lower North Shore boy with a deep affinity for food, wine and the ocean. After completing his degree at UNSW, James travelled extensively across the Great Barrier Reef, Mediterranean and the Caribbean as First Mate and Dive Instructor on a Super Yacht. James’ firsthand insight into the vibrant yet laissez-fare lifestyle of the sea influences the atmosphere of The Sydney Collective’s waterside venues.
Wicks and Short have a long history of collaboration with James beginning his hospitality career working at Jacksons on George for Fraser’s father, Warwick Short. James then went on to work with Fraser at The Keystone Group where he managed a number of venues in the Keystone portfolio including Cargo Bar & Lounge, Bungalow 8, theloft, Sugarmill and Fringe Bar.
In 2012 James and Fraser partnered on the renovation and rebrand of the Brooklyn Hotel and launched The Morrison Bar & Oyster Room. Under James’ role as General Manager the venue won Best Redeveloped Hotel and Best Social Media Activity at the AHA awards in 2013.
James continues to lead The Sydney Collective overseeing all elements of the business with a focus on attracting and developing industry leading talent.
Talented, internationally acclaimed and one of the few top chefs with a mug that looks great on TV, Sean Connolly has a passion for honest food with an imaginative flair that has won the hearts of foodies across Australia, NZ and Britain. Accruing invaluable experience in top hotels and cruise liners throughout the UK, Sean arrived in Australia in 1988 and his passion for the dynamic produce Down Under quickly influenced his now signature style of cooking. Whipping up culinary delights in high end Aussie establishments, Sean’s career took a large step forward when he was appointed Executive Chef in Star City Casino’s Astral Restaurant in 1995.
Sean’s direction secured a long list of accolades and awards including the honour of winning five consecutive Chef’s Hats between 2007 – 2011, GQ Chef of the Year, four time AHA Chef of the Year and 2008 SMH Good Food Guide ‘Chef of the Year’…to list all the awards would just be bragging. In 2009 Sean partnered with SBS on the 13 part TV series “My Family Feast” to celebrate Australia’s love of food and family life, and penned an award winning (Paris Book Fair) cookbook in the same name. Fancy business indeed.
With his transition into celebrity chef status Sean developed a line of food products, opened Sean’s Kitchen in Adelaide and multi-million dollar restaurant ‘The Grill’ with SkyCity Auckland, successfully opening the world-class restaurant from scratch with a 100 day deadline and a budget of four million dollars.
Enough of Connolly’s ludicrously impressive CV and more about us! Joining The Sydney Collective team in 2012 Sean channeled his brilliance for creating premium casual-dining experiences as Executive Chef of our culinary gem ‘The Morrison Bar & Oyster Room’, developing an impressive menu that won the hearts of Sydneysiders. In 2016 Sean’s foodie magic travelled north with us as he became Executive Chef of Balcony Bar in Byron Bay.
A wealth of culinary knowledge and international prowess one can always expect delectable meals and a bellow of laughter from any of Sean’s international kitchens – best enjoyed with a side of his famous Duck Fat chips.
